2 c Rice; washed; drained
1 c Tomato juice
2 1/2 c Coconut milk
1/4 c Ghee
3 Black cardamom pods
1 ts Turmeric powder
2 Cinnamon sticks (1")
5 Cloves
1 Serrano; chopped
1 Onion; sliced into rings
2 ts Salt
2 tb Cilantro; chopped
Heat ghee in a pressure cooker and fry onion slices, cardamom pods,
cinnamon, and cloves. Add coconut milk, tomato juice, serrano, salt,
and turmeric. Add the rice, cover, and cok for 1 minute after
bringing to maximum pressure. Remove from heat and allow to cool for
10 minutes before removing lid. Sprinkle with chopped cilantro and
serve.
